Around here, procuring seeds is usually a 3-4 week ordeal. This Spring, my dad thought growing a "tri-color" Italian bean mix would be fun. We went for it, although I had no idea what to expect from the purple variety. (Purple beans can be finicky.) Ironically, the yellow flat-podded beans didn't make it - it's been a difficult season for germination - while the purple beans are doing wonderfully. What's more, these flattish purple beans called "Red Swan" are quite different from what we expected!

I am really excited about our new Red Swan Beans! They're a cross between a purple snap bean and a pinto bean, and they I think they get the best characteristics of both! They have a purple, snappy, thick pod similar to our Italian "Roma" beans, but the beans inside are bit larger and rounder than your average snap bean. They're definitely not a shelling bean, although they are a little bit tougher than our snap beans (but that may be due to growing conditions.) I recommend cooking them: I blanched mine for six minutes, and they were the perfect combination of tenderness and crunch. However, their flavor is so much more than a snap bean - something I'm sure they get from their pinto bean parent. In other words, they're definitely worth a try! Find them in one of our boxes this week or in the Add-On Market!

Besides our cool new beans, new this week is Fairy Tale Eggplant, Sweet Banana and Bell Peppers, our chef-favorite "Montauk" Sweet Corn, and a new patch of baby lettuce.

"Red Swan" Beans With Brown Butter and Fresh Sage

Yup, I'm serious about our new variety of beans! As I was trying them, I was thinking a sage-brown butter would make them fabulous!

This recipe by Michael Smith calls for beans, butter, garlic, fresh sage, salt & pepper and seems like a snap! Since these beans a bite heartier than a regular snap bean, I'd steam them for 5-8 minutes.



Peach and Beet Salad

To me, there's nothing better than a cold beet and goat cheese salad, so this peach twist sounds delightful!

Grab a bunch of Multi-Color Mixed Beets, Red Haven Peaches, and Basil from the Add-On Market!
